We enjoy eating out just as much as cooking ourselves. Le Marche is full of hidden trattorias and the resort where we work has a fantastic restaurant. But when we do cook, we like to keep it simple. Exactly as Italian cuisine was meant to be.
That's also one of the reasons we love being in Italy: here, food is about simplicity and quality. Good ingredients, one pan, and the rest takes care of itself. This cookbook is the proof.

You need less than you think.
With a bottle of olive oil, a few cloves of garlic, a tin of tomatoes and a packet of pasta you're already halfway there. Throw in a lemon, a chunk of Parmesan and some chilli and you can make half this cookbook. In Italy you'll find all of this at the smallest supermarket. In Britain too, actually, just without the loudly debating Italians who can't agree in the veg aisle about which tomato belongs in the sauce.
